So I made myself a semi yummy, healthy lunch today. I found the recipe on
pinterest last night and thought I would give it a try. It was fairly easy to
throw together last night. After I made it I put it in the fridge and ate it
this afternoon. It tasted better cold because of the fresh veggies… it had a
nice ‘crunch’ to it.
recipe for ….whatever this was: I think it was
called mediterranean chickpea salad:
1/2 a cup of diced red bell peppers
( I used green peppers)
1/8 cup of diced black olives
15 oz of garbanzo
beans (chickpeas) that only took me half the trip to the store to figure out. I
DID NOT use 15 oz. I used about 3oz. *ain’t nobody got time for that*
cup diced tomatoes
2 oz. crumbled feta cheese
1/8 cup red onion, finely
and for the dressing:
1/2 tbs lemon juice
1/2 tbs red
1/4 tsp garlic/chopped
1 tbs plain low fat greek
pinch of salt and pepper to taste
1/2 cup of diced
Now… don’t think you’re going to fall in love with this and
eat it every day for the rest of your life. That probably won’t happen. ‘Was it
good?’ you may ask.. I thought it was pleasant and definetely filled me up.
Because of the feta cheese and bell peppers I thought it tasted faintly of
supreme pizza… that could have been wishful thinking. 🙂 Yes.. it was
definetely wishful thinking.
I guess eating healthy takes some time to get
use to. There’s nothing that will ever compare to fried chicken and mashed
potatoes and gravy but there are a few things I can think of that are more
pleasant than dying from clogged arteries.
